Reuben Casserole
The original recipe is from Carolina Kitchen.
Ingredients:
- ½ cup chopped/diced onion
- ½ cup sour cream
- 2 cloves chopped garlic
- 2 cups sauerkraut, RINSED and well drained
- 3 cups shredded Swiss Cheese
- ½ lb deli sliced corned beef
- 3 slices pumpernickel bread - cubed
- 4-6 teaspoons melted butter
Instructions
- Blend first four items.
- Place in bottom of an 8-inch pan.
- Layer corned beef and cheese.
- Top with bread crumbs and drizzle butter over the bread
- Sprinkle a small amount of cheese on top.
- Bake at 350 degrees for 35 minutes.
- Serve while hot with thousand island dressing.
