Crock Pot Baked Beans
This takes about a half hour to prepare (excluding soaking the beans)
It takes 6-8 hours to cook.
- 1 lb. dry great northern or navy beans
- we used northern
- 1 medium onion chopped
- about ½ cup onion
- Option:
- add diced green pepper
- ¼ cup packed brown sugar
- ¼ cup molasses
- 1 can 6 oz tomato paste or 8 oz. tomato sauce
- ½ cup sauce
- ¼ cup ketchup
- ¼ cup BBQ sauce (your brand choice)
- For spicy:
- add 2 tablespoon hot sauce
- 1 teaspoon minced garlic
- 2 tablespoon Dijon mustard
- 1 teaspoon liquid smoke
- ½ teaspoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 3 cups water
- use 2½ cups if used tomato sauce
- 1 lbs thick cut bacon (cut into 1/2" pieces)
Options:
- Soak beans according to package directions.
- soak over night - 8-12 hrs. (we did this with success)
- quick soak according to package
- In a slow cooker, place beans, chopped onion, brown sugar, molasses, tomato sauce, ketchup, BBQ sauce, salt and pepper. Stir well. Add water and stir again.
- Add ham bone or bacon and stir.
- For bacon: fry in a pan to desired crispness, We prefer it to be slightly chewy. Add the bacon and grease from the pan.
- For ham bone: at the end remove the bone and strip all meat from it and return meat to pot.
- Set crock pot on high and cook for at least 8 hrs. or longer for more tender beans.
- our crock pot on high is close to a simmer
- stir frequently, especially near the end
- This will ensure the beans cook evenly and won't stick to the bottom
- When done, stir the mixture again
- if the beans are too soupy cook for another 20 or 30 minutes to an hour with lid off
Makes about 6 servings.
Notes:
- Can sub meaty ham bone for bacon
