Kombol Cottage Pie
Ingredients
Recipe yields ~8 servings
Base Ingredients
- 1 lb. lean ground beef
- 1 onion diced
- 1-2 teaspoons minced garlic (2 clove equivalent)
- Veggies - Option 1
- 2 carrots ¼-½" diced
- 2 stalks celery chopped ¼"
- 2/3 cup frozen peas
- Veggies - Option 2
- 2 cups frozen mixed vegetables
- 2 tablespoons all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1½ cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried parsley
- ¼ teaspoon dried thyme
- 1 tablespoon tomato paste (optional)
Mashed Potatoes
- 6-8 potatoes (skin optional)
- 3 tablespoons melted butter
- 1/3 cup warm milk
- 1 cup shredded cheddar
Directions
- Preheat oven to 350°
- Start potatoes
- Bring a large pot of salted water to a boil.
- Add potatoes and cook until tender but still firm, about
15-30 minutes.
- Drain, cool and chunk.
- While potatoes are cooking
- Brown ground beef with onions and garlic
- Add veggies,cook until tender (about 5 minutes)
- Stir in flour and cook for 1 minute
- Stir in beef broth, worcestershire, tomato paste, parsley,
thyme, salt pepper
- Simmer20 minutes until gravy has thickened
- Let cool a bit while mashing potatoes
- Mashed Potatoes (fresh)
- Mash potatoes until smooth
- Stir in butter and add milk while mashing until potatoes are
smooth and fluffy
- Season with salt and pepper if desired
- Combine
- Place meat mixture in a 9x13 pan
- Layer with potatoes
- Cover with the shredded cheddar
- Bake 30-40 minutes until filling is bubbly
- Rest casserole for 10 minutes before serving
