Tony's Delicious Beef and Vegetable Soba or Udon
Prep
Soba or Udon Noodles
- 6-10 oz. Soba Noodles -or-
- 6-10 oz. Udon Noodles
- Cook in beef bullion with a little extra water
- e.g. for the 6 oz. soba the package called for 2 qt. water, increase to 2½ qt.
- Use 1/2 strength boulion
- Save the boulion to cook the veggies
- Rinse noodles with cool water and set aside
Beef
- 14 oz. shaved beef
- 6-8 cloves of garlic
- Mince or cut into thin slices
Cook the shaved beef in a mixture of infused oils. I use a combination of olive wood smoke, sesame, and chipolte.
- Coat the bottom of a skillet with the oil(s) and heat
- Add the garlic and cook for about a minute
- Add beef
- Cook until the beef is browned to taste
- Continuously "stir" the meat by teasing and separating the shaved beef slices while cooking
Vegetables
The proportions are not critical. Use this recipe as a starting point, adjust quanties to your taste. Add or remove vegetables to your liking.
- 3 - 4 cups cabbage sliced into thin strips
- 1 - 1½ cups coarsely shredded carrots
- 1 - 1½ cups sliced celery
- 2 bunches green onions
- split lengthwise and cut to 1 inch length
- 1-2 cups mushrooms cut into bite size pieces
- 1 - 1½ cup broccoli (bite size) - optional
- Bring the broth used to cook the soba or udon to a boil
- Add the celery, carrots and broccoli
- When the broth comes to a boil add the rest of the veggies
- Cook 5-10 minute until veggies are cooked to your liking for "crunchiness"
Assembly
- Put noodles in base of bowl for a bed
- Add a layer of the cooked shaved beef
- Add the veggies and broth
- Add your choice of toppings
- sriracha
- soy sauce
- crunchy chowmein noodles
Other veggie possibilities:
- Snow peas or sugar snap peas
- Fresh spinach leaves added as a layer at assembly

Notes
No spices are used in the recipe since- the bullion adds a lot of salt
- the sriracha adds spice at assembly
You may add spices to your taste.
Makes great leftovers. You'll probably run out of beef and noodles before veggies. I found the veggies go great with rice also.
